Color seperation

I have been looking for years for a way ,using a computer, to seperate a cancellation from a postage stamp. I collect
stamps and study the cancellations on them. Dates and City
names are often obscured by the printing on the stamp itself.
And many times the cancellation wasn't applyed very well and that makes things even more difficult. So I thought I'd scan the stamp into a Jpeg (or BMP) that it might be possible to seperate the cancel image (usually black sometimes red,) from the stamp image, this would make it easyer to study the cancellation. Can this be done using GIMP?
